Sweet and tart with a touch of herbal complexity, this riff on the Bacardi cocktail features bourbon instead of rum and incorporates fresh thyme to add depth. It’s a refreshing drink that’s simple to make but deliciously balanced—a cocktail that’s more than the sum of its parts.

The Bacardi Cocktail was wildly popular during and after Prohibition and is a legally protected drink that can only be made with Bacardi rum. The best-known example of this phenomenon is the Dark and Stormy, which technically can only be made with Gosling’s rum. Our Back in Thyme cocktail, however, can be made with any brand of bourbon.

Add bourbon, lime juice, grenadine, and a sprig of thyme to a cocktail shaker filled with ice.

Shake thoroughly until chilled, then strain into a chilled coupe glass.

Garnish with fresh thyme.
